Baked Stuffed Grey Sole
Serves 4-6
Our baked and stuffed grey sole was created by our very own Chef Tony. Our baked stuffed grey sole is part of our clean eating line of meals and is also gluten-free. This dish is not only good, but it is also good for you!
Ingredients
- 2-2.5lb Grey Sole Filet (can substitute for flounder)
- 3 TBL Olive Oil
- 1 Large Shallot Chopped
- 3 Garlic Cloves Chopped
- 1-2 Bags Fresh Leaf Spinach
- 2 Cups Artichoke Hearts Chopped
- 1 Large Tomato Chopped
- 1-1.5 Cups Crabmeat
- Paprika
- Salt & Pepper to Taste
- Tomato Vinaigrette (see recipe)
Directions
- Add olive oil to pan over medium heat. Sauté chopped shallots and garlic cloves until soft. Reduce heat to low and add spinach, artichoke hearts, and tomato.
- Wait until pan contents are cool, then fold in crabmeat. Mix gently until combined.
- Wrap fillets of sole with crabmeat mixture. Place into baking sheet rubbed with olive oil.
- Bake at 350°F degrees for 15-20 minutes.
